SDYC's Buddha Bowl

Missing Friday's meal at the SDYC Welcome Social? Replicate it at home!


There are so many things that we love about Friday's Welcome Social at the South Dakota Yoga Conference. Every year, it gets better and it has evolved over the last five years to include presenter introductions, blessings for the weekend, live music, a silent auction to benefit WAVI (Working Against Violence Inc. in Rapid City), both free-flowing and intentional social time, and of course...an amazing meal! When something isn't broken, we have learned to not change it. Such is the case of the lovely "buddha plate" we've been serving up the last few years. It's a delicious mix of fresh and roasted veggies, nutritious quinoa, and a to-die-for mung bean coconut curry.


Here's what we use for the plate:

Raw Veg: broccoli, carrots, peppers, bean sprouts, avocados

Roasted Veg: beets, cauliflower, Brussels sprouts, sweet potatoes

Raw Greens: spinach, arugula, cilantro

Beans: garbanzo, black

Other: hard-boiled eggs, feta cheese, naan or pita triangles, brown rice, quinoa


*You can edit these ingredients to your liking -- adding, taking out, changing as you see fit!

When you have it all chopped, roasted, and cooked, mix it together, and ENJOY!
